Oatmeal Stout-marinated Roast Striploin

For your Christmas dinner, serve a home-cooked meal.  A flavourful roast beef starts with a good cut – striploin – and a tasty marinade. Head Chef Juliana uses Oatmeal Stout handcrafted by Brewerkz, its rich notes of chocolate and coffee enhanced by fresh herbs and spices to yield a roast with malty caramel flavours.

A: Beef 

3 kg Angus striploin
4 tablespoons Dijon mustard

 

B: Dry Spice Rub

2 tablespoons cracked black pepper
1 tablespoon mustard powder
1 teaspoon ground paprika
1 teaspoon dried oregano
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon kosher salt (or sea salt)

 

C: Vegetables, Beer

200g carrot cut into chunks
200g yellow onion, peeled and sliced
180ml Brewerkz Oatmeal Stout*

 

D: Condiments

Dijon mustard
Creamed radish

 

DIRECTIONS:

1. In a small mixing bowl, combine ingredients under B. Set it aside.

2. Marinate beef with Dijon mustard, followed by spice rub. Refrigerate for at least 6 hours or overnight.

3. Preheat oven to 165° C for 15 minutes.

4.  In a baking pan, put in a roasting rack. Place carrot, onion and beef on top of the rack. Pour the stout (or any strong beer of your choice) into the pan. Enzymes in the beer tenderise the meat as it cooks. The stout flavours the meat and locks in the nutrients while alcohol in the beer gradually evaporates.

5. Roast meat according to your preference, as indicated below:

To test if beef is cooked according to the different levels of doneness: press thumb and finger together lightly to form an ‘ok’ sign.  Gently poke the ball of your palm, then get that same resistance when testing the meat.

Thumb + 1st finger: medium rare, 25 minutes-35 minutes
Thumb + 2nd finger: medium, 30 minutes-40 minutes
Thumb + 3rd finger (ring): medium well done, 30-45 minutes
Thumb + 4th finger (pinky): well done, 40 minutes- 50 minutes

6. Using a carving knife, slice and serve beef with roast vegetables. Complement the meat with Dijon mustard and/or creamed radish.

 

*TIP: For roasting, striploin is ideal as it is the leanest cut and has robust beef flavour.
